We make a lot of quick curry dishes served with rice. Our 15-month old daughter loves them as well!
Our favorite easy dinner? We’re having it tonight – baked chicken with garlic salt and lemon pepper, and roasted broccoli, with bread. Easy and cheap, too!
We love beer can chicken- toss it on the grill and a hour later presto yummy juicy chicken and a no mess kitchen………..
Well, it is a new fave: seasoned sauteed shrimp (precooked) with lemon juice, chopped tomatoes (could use canned) and fresh snipped cilantro, served over rice. Yum!!! Takes about 10 minutes if you use easy rice.
We love taco night. I can make the ground beef (or turkey) ahead of time, then warm some tortillas or crispy shells. Add a buffet of tomatoes, onions, salsa, lettuce and cheese. Make extra meat and have taco salad another night or freeze it for later!
Our favorite easy meal is spaghetti. My oldest son loves when I buy character shaped noodles. It’s quick to fix when we have plans for the evening and it’s a no fuss/no fight meal.
Our favorite is black bean soup. Simple to whip up at the last minute from things I always have on hand.
Spaghetti and meatball is always our go-to meal if I have nothing else prepared. I always have meatballs in the freezer. Throw in some bread and maybe a salad and we are all set.

I believe every meal should have veggies so what I find super quick and easy is to cut fresh veggies and toss them in my cast iron pan with olive oil and freah garlic, stirfry until tender. The veggies are so yummy! Especially Brussell Sprouts (just cut them in half for quicker readiness).
tostadas- those flat tortillas, spread on canned refried beans or taco meat & cheese, toast in oven until warm, top with any taco fillings, Sooooo good and easy!
Our favorite quick meal is taco soup. 1lb ground beef or turkey, 1 can of diced tomatoes, 1 can black beans, frozen corn and taco seasoning. Cook ground beef and follow taco seasoning directions and then add the rest. Serve over corn chips with cheese and sour cream if desired.

My favourite easy family meal is Pasta with Tuna and Asparagus.
It is made all in the one pot, with tinned tuna and tinned asparagus and a white sauce. Dinner in 15mins!
Pasta. Easy. Yummy.
The quickest and easiest for me is spaghetti. I serve it with a side of broccoli or green beans.

Quick and easy family favorite here is home made pizza. I use my bread machine to make several batches of dough and then freeze in balls the right size for large calazones or med sized pizzas. Take out what we’ll need to defrost in the am and use them with home made sauce and what ever toppings we have in the fridge for supper. Easy, cheap, and a crowd pleaser!
Around here our favorite easy meal is spaghetti. It is probably my hubby’s fave meal anyway and my kids both love it. The fact that it is quick and easy makes it perfect! lol

My fastest meal is spaghetti. I can my own spaghetti sauce with cooked ground beef already in it. so….just cook the spaghetti, heat sauce, and supper is served!
My absolute favorite fast thing to make is called Enchilada Bake. It’s a Kraft recipe, and since we’re still a small family, it makes enough for two meals – one to eat that night, and one to freeze for another day. It’s easy and delicious!
Generally one of our favorite easy meals is sloppy joes. But I just made some stuffed tomatoes, yesterday, that were very good and they were easy too. Maybe we’ll be getting a new favorite soon.
Our favorite family meal is kielbasa, beans and rice. While rice is cooking, simply saute the kielbasa in a little olive oil and then add one can of kidney beans and one can of black beans (both with their juices) – cook until hot. Serve the sausage mixture over the rice. We like to add a little hot sauce for an added kick.
The best part of this recipe? It saved me from never being able to have kielbasa again when my husband got sick of plain old kielbasa on its own.
We love fish tacos! It’s so fast and healthy. We cook a few tilapia filets and shred the meat onto whole wheat flour tortillas. We top with tomatoes, red onion, lettuce, and avocado. We also make a dressing with balsamic vinegar and raspberry chipotle sauce. YUM!

Our family is a big fan of pulled pork sandwiches. Just a pork loin roast, bottle of BBQ sauce and fresh kaiser buns. Gotta love the slow cooker! Plus, we almost always have leftoevers – so it’ll cover another “hurry-up-we-gotta-get-to-soccer-and-gymnastics” supper meal.
Our favorite easy family meal is BBQ chicken foil packets, all you need is BBQ sauce, corn, onions and chicken. Easy peasy!
My husband’s first response was macaroni and cheese with hot dogs… but I think our favorite “easy” meal is quesadillas.

Hmmm YUMMERS! My favorite easy dinner is BREAKFAST! LOL, nothing beats scrambled eggs, english muffins, bacon/sausage, and maybe pancakes.
We buy whole roasted chicken from the grocery store and serve it that night with rice and veggies. We use the leftovers again the next day to make chicken salad sandwiches.
I love making Chicken noodle casserole. Quick, Easy, and Inexpensive! Cooked chicken, egg noodles, cream of mushroom soup, milk, salt & pepper. Yummy!
My sister-in-law gave me a wonderful recipe for Crock Pot chicken tacos, and they are absolutely delicious and very healthy. Plus, my husband loves them.
The meal we make when we’re both too tired or overwhelmed to think about what to make (and we didn’t meal plan well) is Nachos. When I am thinking ahead, I love roast chicken in the crock pot. It doesn’t use hardly any dishes and we can stretch it for two dinners and one or two lunches.

We can whip up a quick pizza with my olive oil crust recipe and marinara that I make in a huge batch and keep in the freezer.
Our favorite “go-to” meal is always yummy taco’s. Satisfies my toddler every time so we just cook up a large batch of meat and freeze it in smaller portions so there is always some ready to go. But, when the weather is nice – there’s nothing as wonderful as grilling out!
My favorite easy go to meal is burritos. The kids love them and I just need to brown some turkey, chop some tomatoes and lettuce, and shred some cheese.
A couple favorites include buttered noodles with whatever meat/veg is leftover and re-purposed or enchiladas or pancakes!

it’s a toss up between breakfast for dinner and tacos…both are easy to add “secret” ingredients and the whole family will eat ‘em up!
Sweet italian sausage, diced green peppers, diced tomatoes, all mixed in with Spanish Rice. Cheap, filling, and only takes about 25 minutes. The guys here love it.

Our go to is chicken, rice, veggie “stir fry” or the beef rigatoni type dish that i slap together of some kind of sauce/pasta/cheese and beef.

Favorite easy meal – kielbasa, chopped up + a can of Italian stewed tomatoes + a small bottle of Italian Salad Dressing + a bag of frozen mixed veggies, all over linguine. Easy peasy.
Anything with a bag of frozen pre-cooked ground beef/onions/garlic. As long as I have that in the freezer I know I can think of something to put with it. Most recently we enjoyed it with half a head of cabbage and 1.5 cups brown rice plus some tomato sauce and seasonings. It wasn’t super fast but very low-maintenance because it was all simmering on its own. It made lots for lunch the next day and everyone liked it!

Ok, this is really really easy…but grilled cheese and soup!
The favorite easy meal around here is polenta cooked in the rice cooker–throw some frozen (or fresh) spinach in, add some parmesan cheese, and dinner is served.
We like to make potatoes O’Brien (my husband is a master at getting the potatoes just right!), then add some cubed ham (we get a thick slice at the deli counter), and top it with grated cheddar. When the cheddar melts, we serve it up with a little ketchup or sour cream (or both!). It’s great for breakfast, lunch, or dinner, and makes yummy leftovers, too!

We love to make chicken soft tacos! I just cook the chicken in the crock pot all day in a can of petite diced tomatos some brown sugar and red peppers and when dinner time comes all I have to do is have all the fixings ready!

I would have to say either pasta or stir fry. Both are easy, both can be made with a variety of things that we have on hand and both are favorites!
Oh, wow, I would love this book! My biggest problem right now is keeping to the grocery budget but also having fun/interesting meals that we’ll eat.
My fav easy family meal is stir fried broccoli and tofu with peanut sauce. The recipe is from Jeanne Lemlin’s Main Course Vegetarian Pleasures. It’s fast, easy and super yummy. Best of all my two-year old eats it because there’s peanut butter on the broccoli!

Easy… when we are not in the mood for a big production, we always fall back on grilled cheese and soup!
I’d say spaghetti is our easy, go-to meal because we always have things on hand to make it!

Our favorite easy meal is tacos, especially when the meat is pre-cooked in the freezer. This book sounds awesome – thanks for a great giveaway! I think I’ll be buying it if I don’t win.
I think my two favorite quick meals are these:
1) Sopas and Pinto Beans (not sure if that’s the real name for them, but that’s what I call ‘em). It’s Mazeca mix (then add water and salt, and fry in a hot pan), and then a can of pinto beans (or a cup of dried beans soaked over night) that I set on medium heat with some onions and garlic for about 20 minutes until they’re soft and tasty. Set the sopa on the plate, top with pintos, cheese, and salsa. Yum.
2) Angel hair pasta topped with Mizithra cheese (this was tonight’s dinner) and a side of veggies or fruit. Actually, you could do any type of cheese so it’s a nice way to experiment with new cheeses. Add tomatoes and prosciutto and it’s instantly fantastic.
3) Okay, I have three. I think salad nights are the best. I keep all the toppings in containers ready to set out on the table for people to build their own version of a salad (pine nuts, croutons, craisins, etc.). And, I keep a variety of cheeses, and a few types of dressings on hand at all times. Having everything on hand makes it easy to take the salad in any direction your palate desires. The only thing that needs prep here are the tomatoes/onions/carrots/etc. that you want to add in.
Our favorite easy meal is also “breakfast” for dinner. Eggs and bacon. Or pancakes and sausage.
One of our favorites is Salsa Chicken: coat 3 chicken breasts in 1 T taco seasoning (either homemade or in envelope), pour one jar of salsa on top, and bake at 375 for 35 minutes. Top with 1 cup cheddar, bake 10 minutes more until cheese is melted and chicken is done. Serve with sour cream dolloped on top.
Sides are warm tortillas, yellow rice, and a green salad with tomatoes and olives. Yum yum YUM. And easypeasy.

My fav quick, easy and yummy dinner is chicken bowls. We model it after KFC’s version, using baked popcorn chicken, instant mashed potatoes, shredded cheese, jarred gravy and frozen corn. Takes 10 minutes, has good protein and is nowhere near as bad for you as the fast food version!

Definitely spaghetti–the kids are good at whipping this up, which makes it even easier–plus, it’s a family favorite, so no complaints.

My favorite is a Turkey Biscuit casserole made with leftover turkey or chicken, veggies, cream of broccoli soup and bisquick biscuits on top.
Hmmm, probably quesadillas. Or mac ‘n cheese, or pizza. Lots of easy favorites in our house!
Our favorite easy meal is Chicken Marsala; with a glass of wine, of course!
Pasta is a very quick go-to meal for us. My kids like theirs with cheese on top, and for my husband and I, I will thaw some sauce I had previously frozen, throw some garlic toast in the oven and call it a meal!
My favorite easy meal would be….well I have a few, I only make easy things!
Slathering BBQ sauce on chicken breasts and cooking them in the oven at 350 for 35 minutes is pretty tasty and easy.
I also like to make quick chicken parm with frozen tyson chicken patties, topped with diced tomatoes and mozzarella, cook ‘em for 30 minutes at 375 and those are good over pasta.
Sometimes eating garlic bread and a glass of milk can be a pretty quick, easy, tasty meal. Yum!
