How do you choose?? And I’m just starting to enjoy cooking again after a few year spell of dread in the kitchen. Must have to do with the little ones being 3 now. Last night we had the pumpkin soup from Sundays at Moosewood (Caribbean section) using butternut squash, a standby from long ago and it is SO simple and SO delicious. Toss ingredients together in the AM, blend when you get the chance, eat. I kept thinking how much I’ve missed this soup!

My favorite thing to cook for my family is chicken pot pie. It’s so easy to make, but more importantly, it means it’s cool enough to use my oven. My oven doesn’t get used from May until October because of the extreme Arizona heat so I love the winter months when I can use my oven again.

Anything my whole family actually enjoys eating! I have two small boys, so it’s always a great “pat on the back” when they both — eegads! — scarf down whatever is on their plate. It rarely happens, even when I make something any normal person would deem delicious… but oh, when it does, it makes my heart sing. Weird, I know. :)

Right now it is just my husband and I, but my favorite thing to cook is fried rice, made with leftover rice. It is so easy and it tastes great. I finally figured out how to closely replicate the fried rice at our favorite Japanese restaurant…the secret is to use butter instead of oil to fry the rice in.

I love cooking a big “Southern Sunday dinner” type of meal: pot roast, turkey w/ all the trimmings, chicken and biscuits. Of course it has to be served it up with a big cake! For a simpler meal I like a nice, bubbling pot of pinto beans and some hot cornbread.

My favorite things to cook for my family are our hand-me-down, heirloom recipes. Blasts -from -the past Ethnic foods from our Italian and Polish heritage. The food is incredible, I think of particular family members while I’m cooking, and the tradition (and recipes) get passed onto the kids. win-win all around. These are our ultra-special meals because they take a day (or in some cases, days) to prepare, and hold great significance to us. Lobster fra diavolo, handmade gnocchi, saurkraut spareribs with caraway, beet soup, duck blood soup, chicken with vinegar, risotto with pigs feet! I could go on for days!!

I love making potato leek soup in the crockpot. It doesn’t take a long time to cook, is easy and low fat, and no matter how much of it I make, it’s gone by the end of the day! I’ve never had any leftovers. We just go and get a bowl of it at random points as the day goes on.

I love making pizza from scratch – I use the basic recipe for the dough from Williams Sonoma’s website, then top it with slices of fresh mozzerella, chunks of plum tomatos, fresh basil and lots of olive oil. It’s to DIE for. I don’t make it as often as I would like because it takes so long. I’m thinking of making the dough ahead of time some lazy day and freezing it. That might make it an easy weekday meal.

My favorite thing to make is baked salmon with roasted tomatillo salsa. There is no added salt, sugar, or oil. Just salmon, tomatillos, peppers and garlic. It’s awesome and really healthy!

I am on a sausage and potatoes kick-I found a recipe that makes it all in one pot and it’s super easy and heavenly to eat! We normally have chicken (chicken curry last night) every night, but this sausage recipe is to die for, so I make it every couple of weeks! I just need smoked sausage to go on sale more often! :)
