I hope to use Mondays as a day to post about food, cooking from scratch, and how to use the kitchen as a way to contribute to your family’s simplicity. I was much too busy today to blog as much as I wanted (ironic, for someone dedicating a blog to simplicity!), so it looks like this week I’ll only have time to post our family’s weekly menu plan. So without further adieu, here it is:
- MONDAY: chicken broccoli soup
- TUESDAY: very veggie red beans & rice
- WEDNESDAY: stir fry
- THURSDAY: chicken pasta salad
- FRIDAY: potato corn chowder
- SATURDAY: mama’s chicken stew
- SUNDAY: grilled cheese sandwiches & tomato soup
All of these are simple and good! Yum.

I’m jealous of your one-bowl concept…especially after dirtying almost every pot and bowl in my kitchen with this ’50s budget menu!

Meredith, you can make ANYTHING cheap. I’m sure you can figure out how to one-bowl some pot roast!
