Menu Plan Monday – Heavy on the Crock Pot

So here’s how our meals work for us, in a nutshell.Breakfasts – Hubby and I switch back and forth. We both start our days at 9 a.m., and I know many couples don’t have this same blessing of not needing to head out the door at the crack of dawn. I do Mondays, Wednesdays, and Fridays; he does Tuesdays, Thursdays, and Saturdays. Sundays we either fend for ourselves (except for our 3-year-old, obviously), or we grab something cheap and quick at our local bakery. The only rule we have for breakfast is that it not be the same thing two days in a row. So if I make oatmeal on Monday, he can’t make it on Tuesday. We usually have simple fare, like oatmeal, cereal, eggs, yogurt, fruit, scones, muffins, or pancakes.

Lunches – Almost always leftovers from dinner the night before, and if there is none, we do sandwiches or quesadillas. Nothing fancy, nothing complicated.

Dinners – I plan these at least a week ahead of time; many times I’ll have planned the entire month at once. While I try to incorporate variety, most our meals come from the local produce market, with some meat here and there. Since it’s so expensive here (my grocery budget is double what it was in the States), I try my darndest to not make the meat the main part of the meal, just an ingredient. In fact, we’re talking about going semi-vegetarian, maybe only having meat once or twice a week, since it’s so pricey. We’ll see.

Its okay to be heavy on the crockpot! Its a whole lot cheaper using the crock than going out to eat each of those nights!

i found those recipes while on your blog and the links there from….. and thought…I need to keep these somewhere I can find them to remind myself to try them! I always find recipes on the internet and then because I don’t want to print them out and waste paper that i’ll just loose, I save the link but then can never find it, what have you….. plus when they are good, I want to share them, etc…. SO, I just thought I’d start that blog to record them for myself…. an easy recipe box…. inspired by your links. =)

Meat is pretty pricey even in the states lately. Its always good to have some good vegetarian recipes especially since you have good fresh produce. My favorite is tomato basil soup. Cheap and yummy.
