    "...You now have to eat three more apples to get the same amount of iron as you would have gotten from a single 1940 apple, and you'd have to eat several more slices of bread to get your recommended daily allowance of zinc than you would have a century ago." -pg. 118

    What does this say about where we're headed? What should be done? What or who are the main culprits of this trend?

    I knew people were eating more calories a day than, say, 20-30 years ago, but what a surprise to find out only 20% are eating the recommended serving of fruits & vegetables.

    I'm praying that this does not project much further into the future. I am encouraged by real food movements and projects like Food,Inc that create awareness.

    For a start, spreading awareness about nutritional deficiency in soil and encouraging more support for organic farmers is key.

    It shocked me to read that. Here I am, trying to make good food choices for me and my family, eating lots of fresh produce, cooking from scratch... and then I learn that, actually, I'm not getting as much bang for my buck as I thought I did. It's sad and a bit discouraging - in a way, is there anything we can do?

    But I agree, just being aware will help tremendously. Now I'll be even more committed to how I choose my produce - where it's from, how it's been grown, if it's organic or free-range or grass-fed or not... It will be good to keep it in mind more.
