Jamie uncomplicates the entire process by breaking down every little thing you might need, from recipes to ingredients.  First, she explains why healthy eating is so important, that reading the ingredients instead of the calorie count matters more for long-term health.  To be honest, reading this meant, to me, that her recipes are quality and dependable.  I can trust that everything in this ebook has passed the health test.

All the recipes are easily organized, and they are so easy. She also includes recipes for side dishes that tie in with the main dishes, recipes for salad dressings and mixes, and provides a simple plan that breaks down when to do it all.

Also included are weekly grocery lists, lists of healthy foods, tips for getting kids to eat healthier, and a guide for helping you keep track of your nutritional intake.

Jamie then ends with a reminder about world hunger, and how living simply and eating well means positively impacting the world’s hungry.  I love that she ends on this note.

Seriously, readers, this is a fabulous ebook, chock full of useful information and practical ideas. If you like reading Simple Mom, then you’ll like this ebook!  I plan on using her ideas in my own home.

We rely on noodles and salad as our go to meal when we need to fall back on an easy one. I know, blech and boring, but everyone eats it without blinking an eye.

Burritos made with cheese, pico de gallo, and grilled chicken strips (I buy the Tyson’s frozen ones in the bag for just such an occasion). Yum!

My go to meal is usually salmon cakes, frozen veggies, and rice. Its easy to fix up in 25 minutes and, because I use canned salmon, its great when I don’t remember to defrost a meat. Add a can of kidney beans to the rice, and cook with chicken broth and you have Island inspired rice and peas.

Our stand by meal is pretty much anything with pasta. I keep a steady reserve of noodles on hand. That, or if we’ve got ground beef, my husband will come up with ANY kind of burgers.

Our stand by meal….. Morning Star Ranch Chicken patties, fried and cut into pieces, mixed with mac noodles and homemade marinara sauce, I make sure that I have all the above on hand at all times. I also serve whatever veggie we may have in the house. Everyone loves it!

Our standby meal is mexican…..cheese quesadillas with cheese tomatoes, onions…whatever everyone wants, beans, rice….it actually is a very easy, delicious meal.

Our standby is some kind of spaghetti or other pasta…we buy big boxes of whole wheat pasta and jars of sauce at Costco. Sometimes I’ll make homemade sauce, or I’ll just upgrade the bought sauce with leftover meat, meat from the freezer, fresh veggies, grated or cubed cheese, meatballs…whatever we have in the house.

Hmm. Standby dinner is pasta with frozen cooked meatballs in a tomato sauce( jar). I try to ease the guilt from eating non- homemade by throwing in whatever is at hand into the sauce i.e. sauteing some onion and garlic first, adding some chilli flakes, chorizo-or whatever is hanging around in the fridge. Real lazy nights is order in pizza. No easing that guilt so I don’t even try!

Breakfast for dinner always work – egg sandwiches on english muffins.

Plan-ahead easy dinner is assemble-your-own chicken tacos. Last minute easy dinner is probably grilled cheese sandwiches & fruit.

Our standby is ravioli tossed in brown butter and balsamic vinegar and sprinkled with parmesan cheese and whatever veggies we have around served on the side. It is super quick and my 2 year old will actually eat it.

Our stand-bys for those hurry up Wednesday night meals are pb and j with apples and Sunchips (not spectacular, but healthier than a drive thru), grilled cheese and tomato or chicken noodle soup, and on a really bad night, take out from Penn Station. mmmm. yummy. (!)

Well… since our stand by meal has become eating out… This book sounds perfect for where I am right now! I just went through your meal planning – set up my google calendar with a week’s worth of meals… hit the grocery store yesterday… and am hoping for a change in our stand by ;-)

In a perfect world, however, our stand by meal is TACO night :-) My kids love making them on their own… it’s a lot of fun!

Great standby for starting right after school, and it can cook while you go to “lessons” , sports, etc.
throw bag of frozen turkey meatballs and big jar of spaghetti sauce into the crock pot. turn to high,
go run errands
come home and cook noodles
voila!!

My standby meal is black bean soup. Throw 2 cans black beans, about 1 1/2 cups of salsa and some water (or broth) in the blender. Blend till smooth. Then heat. Easy, healthy and yummy!

My fast standby meal on a busy day is breakfast for supper. That may be eggs, bacon or sausage, hash brown or breakfast potatoes, pancakes, waffles, or toast or any combination!

Our standby dinner is hamburger and green beans….a very simple meal with browned hamburger, a can of green beans and a can of cream of mushroom soup over a bed of rice. Simple, cheap and fast!

Juevos Rancheros.
Cook eggs sunnyside up, serve on top of corn tortillas with salsa and sour cream. I open a can of refried beans for the side. I always have the ingredients, and everyone loves it!

Rice made in my Zojirushi rice cooker topped with chili beans, and sauteed veggies, sprinkled with a little cheese. The rice can be put on a timer to be ready at supper time and the beans just need heated. The chopping & sauteeing is quick too. We have this often for lunches or for a quick supper.

Our standby is spaghetti every time. Seems like you did a lot but, because I’ve pre-made & frozen sauce, I can have it on the table is less than 30 min.
